We believe in the importance of supporting small, independent farmers, distributors, manufacturers and artisans. We use fresh, seasonal ingredients that are characteristic of the Midwest and purchased from as many local businesses and purveyors as possible. Local produce is a big part of sustainability, and consumers want to know where their food comes from. The ideal here is utilizing locally grown food that will make up the bulk of our menu items. In doing this, we reduce our economic footprint and keep our transportation costs low.
